The Best Raw Tacos EVER!

Okay, so I’ve had raw tacos only once in my life (and that was yesterday) so I have nothing to compare it to. Wait. I guess can compare it to a “real” taco. Plus, as a foodie, I have a Master of Arts degree in tasty foods. :D I wish I could say that I created this recipe BUT that would be dishonest. I found the recipe here, however, I made some modifications to it. Also, it’s not 100% raw.

(Yes, it tasted as good as it looks!)

What you’ll need:

Taco “Meat” Filling:

    • 1 Cup of raw walnuts
    • 1 Tablespoon of Soy Sauce (Mine was not raw, however, “they” do make raw soy sauce)

  • 1/8 Teaspoon ground chipotle chili seasoning
  • 1 Teaspoon of ground cumin
  • 1 Teaspoon of EVOO (extra virgin olive oil, not pictured)

(raw cashews and raw walnuts)

Cashew Sour Cream:

  • 1/2  cup of raw cashews (soaked in water for about 4 hours, not pictured)
  • 1/2 FRESH lemon juice (not pictured)
  • 1 Teaspoon of ACV (apple cider vinegar)
  • 5 Tablespoons of water (give or take)

(ACV, Soy Sauce, Chipotle Chili Seasoning, Ground Cumin, Ground Pepper)


  • 1-2 Heads of romaine lettuce (I used 2)
  • 1-2 Medium tomatoes (I used cherry tomatoes)
  • 1-2 Ears of raw corn (I used 4)
  • 2-4 Green onions


Cashew Sour Cream:

Start with the cashew sour cream. Place your raw cashews in a bowl, cover them with water and let them soak (in the fridge) for about 4 hours. Drain the cashews, rinse them and place them in a blender* along with the lemon juice, ACV and a few tablespoons of water. Blend them on high until smooth. Don’t forget to push down the cashews pieces that try to escape (to freedom) up the sides of the blender. Add more water until you get your desired consistency. Place it back in the fridge. *I started the process in a food processor but it wasn’t creamy enough so I put everything in a blender.

Taco “Meat” Filling:

Place all of the ingredients in a food processor and pulse until lightly blended with lots of texture. DO NOT BLEND ON HIGH CAUSE YOU WILL END UP CASHEW BUTTER!

Now, add all your favorite (raw fixins). My son asked if we could add chicken. O_o

And then this happened!

SWEET BABY JESUS, THIS WAS THE BEST THING EVER IN LIFE! I almost wept. I forgot to photograph it with the sour cream.

The Verdict:

Um, I’m a super star in my house. These suckers were so good that I had to make another batch.

D1: Said they were good but his mouth itched a little. I gave him a Benadryl. He also loved the sour cream.

D2: Stopped giving me the #sideeye from the previous day and said they were awesome.

D3: Said I was the best. Like D1, he loved the sour cream

Hubby: Asked me how I did it cause he couldn’t believe it.


I was able to feed a family of 5 for under $15 bucks!!

What Would I Change:

Absolutely NOTHING! The sour cream was a nice touch. The raw tacos were delicious and texture was convincing. It was crunchy and filling. Who new raw tacos could be this amazing? Try it…as long as you don’t have an allergy to any of the ingredients.

    Yummy…looks good sug…even my husband said he’s game for trying it. How did the walnut/soy sauce meat taste? Did you add any taco seasoning? Or would the taco seasoning and soy sauce be too salty??

      Go back and take a look at the ingredients. I used EVOO, cumin and chipotle chilli seasoning too. That’s all you need. Adding taco seasoning will be too much.

    Sug, I’m going to have to try this one. I luvz me some Mexican food…especially tacos. My son would definitely ask me about adding chicken…and he’d be so serious. I’m over here drooling on myself. D1 has allergy to nuts? Definitely can’t be having any reactions. So thankful for not having that allergy…I’d be up the creek cuz I luvz me some cashews. That sour cream looked like it tasted good. Tell me, did the walnuts really taste sorta like meat? Explain the taste consistency.

      It was convincing (the flavor). It was crunchy too not chewy like meat.

    Sug I would like to try this recipe but I HATE cashews and walnuts (and don’t give me the #sideeye cuz I hate them lol). What can I replace them with? Like peanuts and almonds maybe?

    Thank you for posting this. I want to try a raw food diet. I am giving myself 1-2 months to get off or cut down to 10% process food, then I am going to start having raw food days once a week.
